The Food Additive Loophole Is A 1958 Gentleman's Agreement And We Are Still Trusting It

Nearly seventy years ago, Congress wrote an exception into the Food Additives Amendment. If a substance was generally recognized as safe by qualified experts, it required no formal approval. The assumption, charming in its way, was that the experts would be cautious and the companies would be honest. We now read that the agency proposes to widen that opening, permitting certain compounds into our food provided only that they are not carcinogenic. I confess I find the standard remarkably modest. Refraining from poisoning a man outright is a low bar for dinner. I taught undergraduates for forty years and observed that the young are not careless with rules so much as confident that someone else is keeping watch. They are mistaken. The watch has been delegated to the watched. I offer this as opinion, not chemistry. But the architecture of the thing is plain to anyone who reads the statute. If you disagree, tell me what, precisely, you believe is being checked, and by whom.

Am I the only one who assumed someone was actually checking the chemicals in our food?

I read that the FDA wants to widen a loophole so certain chemicals can go into food without a full safety review. I am not a chemist and I am not pretending to be one. I just thought the entire job of a food regulator was the reviewing part. If the only firm line is cancer and everything else gets a pass, then the standard is not safety, it is plausible deniability. Please tell me I have this wrong, because I would genuinely love to be wrong here.

Nobody in this country cooks a real meal anymore and we call that progress

Back in my day you knew what was in the pot because you put it there. Now dinner shows up in a bag with a sticker on it and we call that eating. I am not against convenience. I am against a whole generation that cannot make rice without a machine talking to it. Sunday used to smell like onions. Now it smells like cardboard and delivery fees. Tell me I am wrong. I will be in the kitchen either way.

If Your Bread Can Survive Three Weeks On The Counter, It Should Not Go In Your Body

Back in my day a loaf of bread went stale in two days and that was that. You bought it, you ate it, you planned ahead. Now I can leave a sandwich on the counter for weeks and it still looks like it just came out of the oven. That is not bread, that is a science project with a label. I am not a chemist and I will not pretend to be one. But I do not need a lab coat to notice that the rules about what goes into our food keep getting friendlier for the people selling it and less friendly for the people eating it. Every few years somebody promises to make the approval process faster and cheaper. Faster and cheaper for who? So here is my take. If a food company cannot sell me something that spoils like real food, the burden should be on them to prove it is safe, not on me to prove it is not. Tell me I am being dramatic. My grandmother would have agreed with me.
